Dried Porcini Preparation Instruction
Procedure:
Pour hot water over dried porcini and let soak in a bowl for about 30 minutes.
When porcini are soft, gently rinse in a sieve to remove any grit. The soaking
liquid adds a wonderful flavor to your recipes. Simply place a damp paper towel
in a sieve to catch any grit and pour over a bowl. Chicken broth may also be
used for soaking and then becomes a flavorful addition for soups and rice
dishes. Cooking the porcini brings out the nutty flavor even more.
Use about one
ounce of dried porcini for each 8-10 ounces of fresh mushrooms in a recipe. One
ounce of dried porcini will serve four people in sauces, soups, and stews.
