5 cups Shiitake-Ya™ Gourmet Mushroom Blend™
3 tablespoons olive oil
2 cloves garlic, finely chopped
1-2 small dried red chiles, pounded or very finely chopped
Sea salt and fresh ground pepper
½ lemon, juiced
1 lb penne pasta
1/4 cup freshly grated Parmesan cheese
½ cup chopped fresh parsley
2 tablespoons of butter
Clean dried mushrooms under hot running water and let soak for about 5 minutes or until soft.
Cook penne pasta according to package directions.
Heat olive oil in pan and add mushrooms. Add garlic and a pinch of salt, stirring constantly for about 4-5 minutes. Turn off heat and add lemon juice. Salt and pepper to taste.
Combine mushroom mixture with hot cooked pasta and stir in Parmesan cheese, parsley, and butter. Turn into a pasta bowl and top with additional Parmesan and parsley.
