Shiitake Meat Loaf

Servings: 6


2 cups dried shiitake slices
1 lb ground turkey
1/2 lb ground pork, veal or turkey
4 chopped scallions
1 tsp. finely minced fresh ginger
1/2 cup packed fresh bread crumbs
2 eggs whites
1/3 cup hoisin sauce
2 Tblsp. Chinese rice wine or sherry
1 1/2 Tblsp. soy sauce
Salt and pepper to taste


Preheat the oven to 350 degrees.
Soak shiitake slices in hot water for about 15 minutes or until they have softened. Rinse the mushrooms, discard stems and mince the shiitake.
Place the shiitake in a bowl and add the ground turkey, pork, scallions and ginger. Mix gently to combine the ingredients. Stir in the bread crumbs, egg whites, hoisin sauce, rice wine and soy sauce. Season to taste with salt and pepper.
Place the mixture into a 9-by-5-inch loaf pan. Bake for about 45 minutes.
