Italian Shiitake Soup

Ingredients:
3 cups
Shiitake-Ya™ Shiitake Slices
(*you can use
Shiitake-Ya™ Gourmet Mushroom Blend instead)
6 cups of water
2 cans garbanzo beans
1 large onion, chopped
2/3 cup chopped parsley
4 beef bouillon cubes
4 carrots, thinly sliced
1 tbs ground sage
2 cloves of garlic
Salt & pepper to taste
2 pounds mild Italian sausages, casings removed
Procedure:
1. Crumble sausages into soup pot over medium high heat. Cook, stirring to break
up, until browned. Add garlic, onion, parsley, and carrots. Cook stirring until
onion is soft.
2. Add garbanzos and their liquid, water, bouillon cubes, sage, and dried
shiitake slices. Bring to a boil, cover and reduce heat. Simmer until carrots
are tender and shiitake are soft. (About 20 minutes) Season to taste with salt
and pepper. Pour into bowls and sprinkle with grated Parmesan cheese.
