Simple Shiitake Soup

Servings: 4


4 cups Shiitake-Ya™ Shiitake Slices
(*you can use Shiitake-Ya™ Gourmet Mushroom Blend instead)
10 cups water
4 boneless, skinless chicken breasts, cut in bite-size piece
1 onion, chopped
1 bay leaf
2 tablespoons butter
1/2 cup rice
Salt and pepper to taste.


1. In a large pot sauté chopped onion in butter until soft and golden.

2. Add water and chicken breasts. Then, add bay leaf and salt & pepper. Bring to a boil and simmer for 30 minutes, uncovered.

3. Measure out 4 cups dried shiitake and rinse under running water using a sieve. By hand, break shiitake into small pieces. Add to boiling soup along with 1/2 cup rice.

4. Bring back to boiling and simmer, covered, for about 20 minutes.
